Sure, one guy turns lead into gold and it's impressive. If anyone else finds out the technique, that's two people doing it... and then more people find out. And more. And someone really greedy makes a ton of gold. Then there's less demand. Fewer people want gold because it's just not that rare any more. And so gold loses all value.
If you think that couldn't happen, look into diamonds. Supply is kept artificially low by a monopoly on the diamond industry (no a paranoid fantasy -- there really is a monopoly on the diamond industry) so that demand remains high. High demand means there's a high value still placed on what's out there.
